This recipe won't take much time. I'd like to share my favorite way of making blini with kefir—thanks to the addition of boiling water, the pancakes turn out incredibly tender and delicate, almost lace-like, and differ slightly in color and texture. These blini hold their shape well, making the finished rolls both attractive and appetizing! Here's how to make blini with kefir: 1. Crack the eggs into a bowl and whisk with salt and sugar using a fork. 2. Without stopping the vigorous stirring, slowly pour in boiling water in a thin stream to prevent the eggs from curdling. The mixture will immediately increase in volume. 3. Gradually add flour to this mixture, stirring constantly. 4. In a separate container, mix kefir with baking soda. If the kefir isn't sour enough, it's better to neutralize the soda with vinegar first. Pour this mixture into the batter. 5. Finally, add vegetable oil to the batter. Mix thoroughly and let the batter rest for a while to allow the ingredients to combine. 6. Heat a greased frying pan and cook each pancake on both sides. That's it! To make blini rolls, simply prepare a tasty filling and wrap it in the blini, either folding them into little envelopes or rolling them up—whichever you prefer. Alternatively, you can serve them plain—they're just as delicious, I promise! Serve them cooled or slightly warm.
