I recently had the chance to work with this fish. I decided not to divide it, but to leave it almost whole. So I suggest you read on,

Wash and clean the burbot. Remove the fins, innards, head, and tail. Leave only the fillet.

Place the fish in a greased baking dish. Arrange peeled and sliced potatoes around the sides. Spread mayonnaise over everything. Sprinkle the burbot with lemon juice. Add salt and spices to taste.

Bake the dish at 200 degrees for one hour.
