A tasty appetizer for any gathering. This simple burrito filling recipe is not set in stone — no matter how many times I’ve made it, something was always missing at home, and I had to substitute one thing for another. So here I’m giving you a kind of base recipe, and you can improvise however you like — you can even swap the chicken for mushrooms, meat, or even finely chopped salami. So, how to make burrito filling: 1. I pre-boiled the chicken in salted water, but if yours is still frozen, start by boiling it. 2. Wash all the vegetables, peel them, and chop them as finely as possible. You can press the garlic through a press, and peel the tomatoes first. 3. Grate the cheese and put a skillet with vegetable oil on to heat. 4. By this point the chicken should already be done. Cut it into cubes. 5. In the hot skillet, sauté the garlic and onion until the onion turns golden. 6. Time to add the chicken and fry everything together! 7. Add the chopped tomatoes and bell pepper. Turn down the heat. 8. Season with salt and pepper and cook everything through together. At the very end, sprinkle the filling with grated cheese. Done! Now all that’s left is to spread the filling on tortillas, add fresh vegetables and canned red beans, and wrap them up like envelopes. Serve with herbs and sauce.
