
Elderberry Honey
Description
Not only are elderberry berries rich in beneficial substances, but also the flowers. They are used to make tea, tincture, jam, or honey. Elderflower honey is very easy to prepare and requires only sugar, water, and a bit of citric acid.

1. Elderflowers for honey-making are collected during blooming. Damaged flowers should be discarded. Citric acid can be substituted with lemon.

2. The most labor-intensive part of the work is separating the flower heads from the stems. Try to remove as many green stems as possible. Only white flower heads are used for honey.

3. Pour water over the flowers and simmer over low heat for 20 minutes. Set aside and let the decoction steep for 20–30 minutes.

4. Strain the flowers, discard them.

6. Add the required amount of sugar to the decoction, mix well. Place over heat. Simmer the honey for 2-3 hours over low heat, stirring occasionally. Continue cooking until the mixture reduces by half and thickens.

7. Add lemon acid or lemon at the end. Simmer for another couple of minutes and turn off the heat.
