
Mint Gingerbread Cookies
Description
The recipe won't take much time. Mint gingerbread cookies are very easy to make. The only thing you'll need is spices and brown sugar. But that's no problem—brown sugar can always be replaced with white sugar, and you can share the spices with a friend, or rather, ask for some in exchange for a few finished cookies. Prepare the dough, shape the cookies, and bake in a hot oven for 15 minutes. Serve with tea or coffee.

1. First of all, we need to mix the ingredients. In a large bowl, combine vegetable oil, egg, brown sugar, honey, and mint essence; whisk until smooth. In another bowl, mix flour, salt, baking powder, cinnamon, cloves, and nutmeg. Preheat the oven to 180 degrees Celsius. Line two baking sheets with parchment paper.

2. If the dough turns out too sticky, add flour. It should be elastic and not sticky. Divide the dough into two parts, roll each into a log, and cut into pieces. Shape the pieces into balls, roll each ball in sugar, and flatten with your hand. If desired, and if you have candied ginger, you can sprinkle the gingerbread cookies with it before baking. Place the cookies on parchment paper. Bake in a preheated oven for 12–15 minutes.
