Description

The recipe won't take much time. I want to share with you a wonderful recipe for mint jelly! This jelly goes perfectly with lamb dishes. It can also be served with fish and poultry. Mint jelly will surely decorate your table and delight your guests, especially children. Serve chilled.

    1. Wash the apples thoroughly, cut out all bruised areas and other damaged spots, remove the core. There's no need to peel them. Slice the apples thinly.

    2. Then place in a heavy-bottomed pot and pour in water. Use 600 ml of water per 1 kg of apples. Bring the water to a boil, then reduce the heat, cover the pot with a lid, and continue cooking over low heat for 30–40 minutes. The apples should become soft.

    3. Take a sieve, line it with cotton or nylon cloth, and place it over a container to collect the juice. Then place the cooked apples into the sieve, gather the edges of the cloth into a bundle, and hang it over the juice container. Let the juice drip for at least 4 hours, or preferably overnight. Do not try to speed up the process by pressing or squeezing the apples! The juice should be clear.

    4. When the apples release their juice, pour it into a measuring cup. For 600 ml of apple juice, you will need 450 g of sugar. Next, transfer the juice to a saucepan, add the sugar, and cook the mixture over low heat until the sugar dissolves. Then bring the contents of the saucepan to a boil and cook for another 2 minutes.

    5. Next, add wine vinegar to the apple juice and season with salt. Simmer for half an hour, stirring and skimming off the foam occasionally. Test the jelly's readiness on a chilled plate. If the jelly is not thick enough, continue cooking, checking for doneness every 5 minutes. Cooking time depends on the pectin content of the apples, the amount of sugar, and the quantity of water.

    7. Add the crushed mint to the apple jelly and mix well. Pour the ready jelly into sterile jars and seal tightly. Store the mint jelly in a cool, dark place.
