1. Prepare the sauce: add pitted cherries, red semi-sweet wine, balsamic vinegar, sliced ginger, salt, and pepper, then blend thoroughly with a blender until smooth.

2. Sear the meat in vegetable oil first on one side, then on the other until golden brown. At the end, season the meat with salt and remove from the heat.

3. Pour the sauce into a saucepan, add starch, mix well, and gently heat the sauce over the lowest heat, adding the meat in such a way that the vegetable oil does not get into the saucepan.
