
Meat in a tajine
Description
The dish is prepared without unnecessary complications. If you want to cook meat with vegetables, try doing it in a tagine. This cooking method is very popular in the East. And it's no surprise, since in a tagine all the ingredients turn out very juicy and tender (even meat like beef). Once the dish is ready, it can be served at the table.

Rinse the chickpeas and soak them in cold water overnight. This will make them cook quickly. If you don't have chickpeas on hand, use regular peas or beans instead.

Rinse the beef under water and pat dry with paper towels. Then trim off membranes and tendons, and cut the meat into medium-sized pieces.

Pour a little vegetable oil into a frying pan and sauté the beef. Peel the shallot and garlic, add the vegetables to the meat, and fry them together until golden brown.

Take the soaked chickpeas, drain the water from them. Place the legumes on the bottom of the tagine, spreading them evenly across the surface of the bowl.

Place the fried meat with onion and garlic on top of the chickpeas. Pour over the juice formed during frying. Season with spices, herbs, and salt.

Peel the carrots and wash them under running water. Cut them into large strips and arrange them on the meat in the shape of a star. Place several large green olives on top.

Wash the red and yellow sweet peppers. Remove the seeds and cut them into elongated pieces. Also wash the cherry tomatoes. Place the vegetables in a tagine. Sprinkle the ingredients again with spices and salt, then pour a glass of hot water into the tagine.

Cover the tagine with a lid. Preheat the oven to 180 degrees. Place the tagine in the oven and bake for three hours. Serve hot.
