Description

The recipe won't take much time. I suggest baking an appetizing piece of pork neck in a roasting bag. Just two ingredients and a baking pouch—five minutes of active work and that's it! The result is delicious, juicy meat, fragrant and with a golden crust! I guarantee nobody will remain indifferent at the table! You can replace the adjika with your favorite spice mix, adding salt to taste and a tablespoon of vegetable oil. Serve hot.

    Prepare the ingredients. The meat should be chilled or completely thawed. I use Abkhazian adjika.

    Rub the meat with adjika on all sides, gently pressing it into the surface of the piece. Abkhazian adjika is usually quite salty, but you can additionally season the meat with a little extra salt if needed.

    Tie the meat tightly with strong cotton string, like a sausage. Do not skip this step if you want your meat to hold its shape and slice thinly.

    Place the meat in a roasting bag and tie the ends. Refrigerate the meat to marinate for 1 hour up to 2 days. The longer the meat marinates, the more pronounced the flavor and aroma will be.

    Take the meat out an hour before roasting and let it come to room temperature on the counter. Place the meat in a roasting bag inside a baking dish. Preheat the oven to 200°C and roast the meat for 20 minutes. Then reduce the oven temperature to 120°C and continue roasting for one and a half hours.

    Remove the meat and carefully cut the sleeve lengthwise. Pour the juice over the meat and return it to the oven.

    Increase the temperature to 220 degrees and brown the meat on top for 3-5 minutes.

    Remove the meat from the oven, take it out of the mold and bag, transfer to a plate or cutting board, and loosely cover with foil. Let the meat rest for 15 minutes before slicing. Don't skip this step if you want a juicy dish!

    After some time, remove the strings and slice the meat with a sharp knife into slices of desired thickness. If you plan to serve the meat cold, do not remove the strings and foil until the meat has cooled completely.
