
Meat stewed in tomato sauce (Spezzatino al pomodoro)
Description
The recipe won't take much time. A hearty and undoubtedly aromatic dish of Italian cuisine. Meat with vegetables is simmered over low heat for 40–60 minutes. I recommend using seasonal vegetables, of course, with tomatoes being an essential ingredient. Everything else can be adjusted to taste. You can also use any preferred type of meat; I recommend pork tenderloin. So, here's how to make it. Serve hot.

Prepare all the necessary ingredients.

Finely chop the onion into small cubes, slice the carrots, and place them in a pot with the peas. Add a couple of tablespoons of olive oil, mix well, and sauté over medium heat for 3 minutes.

Cut the meat into 3-centimeter-thick slices. Dredge in flour, shaking off the excess.

After 3 minutes, add the meat to the vegetables, mix and fry for 7-10 minutes, stirring constantly.

If using a fresh tomato, grate it, then mix with tomato paste and a pinch of sugar.

Add the tomato mixture to the meat, stir, pour in the broth, and simmer over low heat.

Simmer the meat with vegetables, covered, over low heat for about 40 minutes. At the end of cooking, season the dish with salt, pepper, and Italian herbs, mix well, and continue cooking uncovered until the sauce reaches the desired consistency.
