Braised meat with quince

Description

Quince is delicious not only fresh or in jam, but also as a side dish for meat. You can use any meat for this stewed meat with quince recipe—veal, beef, or pork. By the way, chicken and turkey also pair well with quince. But I especially like lamb. I use bone-in lamb, but you can use lamb ribs or any other cut.

    Prepare all the necessary ingredients for cooking.

    Peel the quince and cut it into slices.

    Heat olive oil in a skillet and sauté the quince until golden brown.

    Set aside the fried quince. Meanwhile, slice the onion into half-rings.

    Fry the onion separately in the same oil (until golden brown).

    Remove the onion, place the lamb cut into pieces into the pan.

    Sear it lightly on all sides until slightly golden. Then add the onion, season with salt and pepper, and optionally add cumin or coriander. Cook over reduced heat for another 10–15 minutes.

    Now it's time for the wine. I used dry white wine.

    Pour in the wine and simmer over low heat for about 35-40 minutes.

    Then evenly distribute the quince. Continue simmering until the quince becomes soft, but it should not fall apart.
