
Meat stewed in a pot
Description
The recipe won't take much time. To make the stewed meat even more delicious and worthy of a festive table, there are some simple rules to follow. Sometimes we neglect them, yet they're not complicated at all. You just need to sear the meat in a frying pan or roasting pan, then transfer it to a thick-bottomed pot for simmering, leaving the excess fat in the pan and discarding it. The meat should be cooked over a low, steady heat, and you should monitor the liquid level. The meat should be only slightly covered with sauce or broth, about halfway. Do not add excess water, assuming it will simply evaporate during cooking. Serve hot.

Wash the young carrots with a brush, dry them, and cut into 2-3 pieces crosswise. If they are too thick, cut the upper parts in half lengthwise.

Dice the onion.

Rinse the meat under cold water, dry thoroughly, and cut into large cubes.

Heat the oil in a skillet and, in batches, sear the pork cubes over high heat until golden brown.

Using a slotted spoon, transfer the fried meat to a pot, and in the remaining oil, sauté the onion until golden brown.

Transfer the onions to the pot with the meat. Deglaze the meat and onion juices remaining in the skillet with wine. To do this, drain the excess oil from the skillet and pour in the wine. Boil over high heat until reduced by half, scraping up the browned bits from the bottom of the pan with a spatula and dissolving them into the wine. Pour the reduced wine into the pot, add a glass of boiling water, and put in the peppercorns and cloves. Simmer over low heat for half an hour.

Add the carrots and simmer for 10 minutes. Do not stir.

Pour in the strained tomatoes, add a pinch of sugar, and season with salt.

Increase the heat to medium and simmer until the sauce thickens. Add the rosemary sprig and turn off the heat. Let the meat rest, covered, for about 15 minutes.

Serve the meat hot, placing it on preheated plates. You can serve the meat with any side dish if desired, but it is especially delicious simply with fresh bread.
