We wash the meat and slice it into 1-1.5 cm wide pieces, cutting almost but not all the way through, creating a fan or accordion shape. Mix together salt, nutmeg, pepper, oil, and wine. Rub this mixture all over the meat and let it marinate for about an hour.

Wash the pears and slice them thinly, removing the core and seeds. Sprinkle them with lemon juice.

The foil in which we'll bake the meat should be folded into 2-3 layers. Place the meat onto the foil, and insert pear slices into the cuts. Between the pear and the meat, add cranberries or lingonberries.
