Description

Meat in clay pots is not an everyday dish—it's perfect for weekends, yet it's not at all difficult to prepare. Of course, it's best to use wild mushrooms, but it also turns out very tasty with regular button mushrooms or oyster mushrooms. You can use any meat you like or have in the refrigerator. As the ingredients slowly braise in the pots, all the flavors combine into a fragrant, delicious dish that will warm you up in any weather.

    Prepare the ingredients according to the recipe list. Cut the meat into pieces.

    Cut the peeled potatoes into large cubes.

    Dice the carrot finely or grate on a coarse grater, slice the onion into half-rings.

    Slice the mushrooms, but not too finely. Do not wash the mushrooms, just remove any possible debris, as they absorb water like a sponge, which is not needed here.

    In a pan with vegetable oil, fry the meat until a golden crust forms.

    In the same skillet, sauté the onion with the carrot.

    Without adding vegetable oil, sauté the mushrooms until the liquid evaporates.

    Add the minced garlic, a pinch of rosemary (and, if you like, a pinch of thyme), ground black pepper, and salt. If you are using already salted broth, for example from a stock cube, do not add salt. Alternatively, salt to taste.

    Lightly mix sour cream with tomato paste and spices, add bay leaf, and pour in broth (or warm water; you can use broth made from a bouillon cube). Pour the broth to reach about two-thirds of the height (approximately 150 ml each). Place in a cold oven, turn on the heat to 180°C, and simmer for 1 to 1.15 hours.

    After 1-1.15 minutes, take the pots out of the oven, remove the lids, add a small amount of grated cheese, and return to the oven for another 15-20 minutes.

    Serve the meat directly in the pots, sprinkled with fresh herbs. It's appropriate to serve rye bread and pickled or canned cucumbers with this dish. Meat in pots retains heat for a long time, encouraging leisurely conversation at the table.
