Prepare all the necessary ingredients for cooking meat with eggplants in pots in the oven. Wash and dry the vegetables.

Trim the ends off the eggplant and cut it into large cubes. Place it in a bowl, add salt, pour cold water over it, and let it sit for 20 minutes. Drain the water, rinse the vegetable under cold water, and let it drain completely.

Peel the onion and finely chop it. Pour vegetable oil into a frying pan, heat it up, and sauté the onion for 5–7 minutes, stirring over medium heat.
