
Meat with eggplants in the oven
Description
Recipe for baking meat with eggplants in the oven is extremely simple. 1. Slice eggplants into rounds, salt them, and let sit for about 20 minutes. Then thoroughly rinse under running water and dry. This helps remove the characteristic bitterness of eggplants. 2. Place the eggplants on a baking sheet lined with parchment paper or greased with oil, spray with olive oil, and bake in the oven for 15–20 minutes. They should become soft and slightly crispy at the edges. 3. Prepare minced meat. 4. In a frying pan with a drop of oil, sauté onions until golden, then add the meat. 5. Once the minced meat is slightly browned, add finely chopped peeled tomatoes, garlic, basil, oregano, and thyme. Season with salt and pepper to taste. 6. If the meat mixture becomes too dry, add a little broth or hot water during cooking. Simmer the minced meat for about 15–20 minutes. 7. Place the eggplants at the bottom of an ovenproof dish, top with the meat mixture, and bake in the oven for 20–25 minutes. Baked meat with eggplants goes perfectly with rice. Before serving, garnish with fresh mint leaves.
