Levantine-style meat recipe
Instructions

Step 1

Add ghee (1 tbsp) to the pressure cooker, heat it, then add the onion and meat.
- 2
Step 2

Once the meat is browned on all sides, pour water over it (the water level should be a couple of centimeters above the meat). Add the spices, cover with a lid, and cook for about 35 minutes. If you are not using a pressure cooker, cook for twice as long.
- 3
Step 3

Tear the lavash into small pieces and set aside.
- 4
Step 4

When the meat becomes tender, set it aside and strain the broth.
- 5
Step 5

In a saucepan, melt the clarified butter and add 3 cups of broth. Season with salt to taste.
- 6
Step 6

When the broth comes to a boil, add the rice, cover with a lid, and bring to a boil again.
- 7
Step 7

Next, reduce the heat and cook for 15 minutes or until the rice is done.
- 8
Step 8

Now, take about 1 cup of broth and add lemon juice and garlic to it.
- 9
Step 9

Pour the mixture over the lavash. Make sure the bread absorbs the broth; this may take about 2 minutes.
- 10
Step 10

Then, on top of the lavash, place a layer of rice and put the meat on top.
- 11
Step 11

In a skillet, melt 1/2 tablespoon of ghee, then add almonds or pine nuts and sauté until golden brown.
- 12
Step 12

Sprinkle nuts and finely chopped parsley over the meat. Can be served.
