Description

For cooking this dish, you should use "Madeira" wine specifically. It is unique and best suited for this dish. You can substitute it with "Sherry," but it is better to use "Madeira" wine.

    Squeeze the sauerkraut to remove the brine. Transfer the sauerkraut to a colander and let the brine drain off. We only need the sauerkraut.

    Place it in a heavy-bottomed pot. Simmer over medium heat for about 40 minutes, stirring occasionally. You can add a little vegetable oil while simmering if needed.

    While the cabbage is stewing, chop the onion and grate the carrot on a coarse grater.

    Now slice all types of smoked meats. You can use any type of ready-to-eat smoked meat product, but one thing must be included: Krakowska boiled-smoked sausage.
