Description

This recipe won't take much time. Of course, it's not a classic Swabian-style meat dish (probably such a thing doesn't even exist!), but rather a "free variation." However, it's inspired by authentic Swabian culinary traditions—essentially peasant food: simple, yet hearty, delicious, and filling. Here's how I prepare Swabian-style meat: Pre-dry bread in the oven ahead of time. Usually gray bread, but if you like a tangy flavor, go for rye—you won't regret it. Dry the bread until it's slightly toasted; this will give the meat a special aroma. Once dried, grind the bread into crumbs using a meat grinder. Buy a good piece of pork at the market (neck, leg, or shoulder—whichever you prefer). Rinse the meat, remove any membranes or sinews if present, and cut it into roughly 2x2 cm pieces. Peel the onion and garlic. Slice the onion into thick strips, and crush the garlic with the side of a knife. Heat a skillet well with some oil, then toss in the crushed garlic for just a minute or two. Flip it once or twice with a spatula, and as soon as it turns golden, remove it onto a small plate. Add the meat to the skillet with the fragrant garlic oil and sear for about 10 minutes until nicely browned. Add the onion to the meat. Once the onion starts to sauté, pour in the breadcrumbs, mix thoroughly, season with salt and pepper, add a bay leaf, stir again, and pour in a bottle of beer—ideally German. Return the garlic to the skillet, reduce the heat, cover with a lid, and simmer for about 30–40 minutes, until the meat is tender. Serve the pork hot, in its aromatic bread-beer sauce, accompanied by white sauce and chopped fresh herbs. For special occasions, serve it in bread bowls.
