
Provençal-style meat

1. Finely chop the meat. Finely mince the onion. Crush a garlic clove. Peel the tomato, remove the seeds, and chop. Heat 1 tablespoon of olive oil in a frying pan over high heat. Add the chopped bacon and cook over medium heat for 4-5 minutes, stirring frequently, until the bacon is browned. Transfer to a pot and place over high heat.

2. Add beef to the skillet and sear. Cook for 6–8 minutes until browned, turning frequently to ensure even browning on all sides. Transfer the meat to a pot, pour in wine and broth. Heat the remaining oil in the skillet, add onions, and cook over medium heat for 5 minutes, stirring occasionally to prevent sticking and ensure even cooking. Add carrots and cook for another 5 minutes until softened.

3. Add tomatoes, tomato paste, and a crushed garlic clove, as well as Provence herbs, mix well and transfer to a pot. Cook for 5-7 hours, or until the beef and vegetables become completely tender and very soft.

4. Remove the lid, add the zest and orange juice, sprinkle with parsley, and serve.
