The meat should be thoroughly tenderized with a mallet, but be careful to keep it intact and avoid tearing. This can be easily achieved by covering the meat pieces with plastic wrap. Prepare the necessary ingredients. Rub the meat with the spice mixture and let it marinate for 30 minutes.

Cut the meat into 1 cm thick slices. Mix the mustard and 1 tbsp of olive oil, then brush the meat with the mixture.

Cover the meat with plastic wrap and pound with a mallet so that the meat does not tear. Let it marinate for 15 minutes.

Preheat the oven to 180 degrees. Line the baking dish with foil and brush it with olive oil. Slice the tomatoes into 1 cm thick slices and place them over the meat, then spread with mustard.
