Place the pan over heat and heat it well. Cut the bacon into slices and fry in the pan without oil until crispy, for about 10 minutes.

Transfer the fried bacon to a plate, and pour the rendered fat into a casserole dish or a heavy-bottomed pot. Leave only a couple of tablespoons of fat in the frying pan. Slice the onion into rings, mince the garlic, and sauté them in the remaining fat until soft.

Now place the skillet with fat over heat and sear the beef on all sides until golden brown, about 15 minutes.

Pour a glass of water into the casserole dish, add salt, pepper, sugar, thyme, and bay leaf, then pour in the beer. The meat should be completely covered with liquid, so add more water if necessary. When the liquid comes to a boil, skim off the foam and add the fried onion and garlic to the casserole. Cover the dish with a lid and simmer the meat over low heat for 2 hours.

After the time has elapsed, place a dry skillet over heat and toast the flour until golden. Transfer the flour to a deep bowl, pour in half a cup of broth from the roasting pan, and stir until smooth. Then gradually add more broth until the mixture reaches a consistency similar to sour cream. Pour this mixture back into the roasting pan and stir everything together. After bringing to a boil, simmer for another 15 minutes, then remove from heat. Add vinegar, chopped parsley, and bacon slices. Serve the finished dish with any side dish of your choice.
