
Beef Bourguignon
Description
The dish is prepared without unnecessary complications. Cooking beef Burgundy-style is a rather lengthy process, taking about 3-4 hours, but I'll say right away—it's worth it! For gourmets, beef Burgundy-style is an indispensable main course that should be prepared with love and enjoyment. Still, although the dish takes time, it's very simple to make and requires minimal effort from you. Good luck with the cooking! ;) The finished dish can now be served.

We thoroughly rinse the meat under running water, dry it with a paper towel, and cut it into fairly large pieces. Here, you need to use your judgment. The pieces should not be too small, or they will shrink and dry out, but neither should they be too large, as they will be inconvenient to eat.

Rub the pieces with salt and pepper.

Next, slice the onion into rings or half-rings (or cubes), and cut the carrots into random pieces. I prefer the carrots to be cut relatively large.

Cut the bacon into small pieces.

Fry the bacon in a heavy skillet. Once the bacon releases its juices and turns into crispy bits, remove it and set aside on a plate. In the remaining fat, sear the pieces of beef. If there is not enough fat, add some oil.

Sear the meat over high heat until a golden crust forms.

In the same heavy skillet where the meat was fried, sauté the onion. Again, if there is not enough fat, add oil.

Once the onion is browned, add the carrots, finely chopped garlic, and tomato paste. Mix well and simmer for a few minutes.

Then add the flour and mix very well. Then pour in about 100 ml of wine, stirring the mixture constantly.

Put the meat and bacon back into the pot, pour in another 400 ml of wine and broth. The meat should be completely covered with liquid. Add bay leaf and spices, but do not add salt! Bring to a boil, then reduce the heat to the lowest setting and simmer the meat for about 2–3 hours.

When the meat is almost ready, sauté finely chopped mushrooms in a frying pan.

Add them to the meat. Also add fresh finely chopped herbs.

Serve beef Burgundy with a side dish. Mashed potatoes are the best choice. Don't forget a good dry red wine. :)
