Wash and dry the meat. Make cuts near the bone, but not all the way through.

Prepare the marinade for the meat. To do this, finely chop the marjoram leaves and garlic. Mix with 3 tablespoons of oil, salt, and pepper. You can do this using a mortar or a blender.
