Description

Rinse the meat under running water. Remove coarse tendons and membranes. The meat should be perfect and tender. Boneless cutlet is the best choice. On my photo, there is a thin white tendon. It is very soft. All coarse tendons must be cut out.

Rub the meat with spices and herbs for meat on all sides. Don't forget to salt it.

On a well-heated grill pan, sear the meat on both sides until a golden-brown crust forms.

Place the seared meat onto a sheet of foil folded in half.
