Here is a recipe for hot-smoked meat. The cooking method is simple. But it is very important to choose a good, high-quality cut of meat. Pork flesh is the most suitable. It is better if it is a ham cut. Smoked meat turns out aromatic and tasty. This is a 100% natural product that contains no unnecessary ingredients. 1. Before preparing hot-smoked meat, combine various seasonings and spices: ground black pepper, paprika, thyme, and bay leaf. Peel the garlic. Finely chop it. Mix it with the spice blend and salt.

2. Take the meat as a whole piece. The ham cut is best suited. Rinse thoroughly. Blot off excess moisture. Cut into pieces 8-10 cm thick.

3. Then rub each piece of meat with a seasoning mixture with garlic and salt. Put everything into a plastic wrap bag. Leave it in the refrigerator for 4 days. During this time, the meat will marinate completely.

4. Prepare the smoker. For this, use a regular grill. Place an electric hot plate at the bottom. Put a metal bowl with firewood on top (preferably alder or cherry). Place the grate on top.

5. Place the pieces of marinated meat on the rack. The smoking process lasts 4 hours at a temperature of 80–90 degrees. The meat will be ready when it acquires an appetizing brown-golden color. Pierce a piece of meat to make sure it is cooked through inside. Serve both hot and chilled.
