
Chorizo Meatballs
Description
Another variation of "Tapas" (Spanish appetizers), based on the classic meatball recipe, but the addition of roasted Spanish chorizo sausage makes this dish very original and transforms its flavor. Moreover, it's very easy to prepare.

1. Finely chop the onion. Finely chop the garlic. Grate the Parmesan cheese. Cut the tomatoes into pieces. In a bowl, mix the ground beef, onion, garlic, rosemary, Parmesan, salt, and pepper. Mix well with your hands. Take about 1/8 of the mixture and shape it into a ball the size of a golf ball. Repeat this process with the remaining meat mixture.

2. Heat olive oil in a large skillet over medium heat, add the meatballs. Cook for five minutes, turning the meatballs frequently to brown them on all sides. Add wine, tomatoes, tomato paste, and more salt and pepper, then simmer over medium or low heat for about 15 minutes. Turn the meatballs occasionally and baste them with the sauce to keep them moist.

3. While the meatballs are cooking, preheat the oven to 180 degrees. Slice the chorizo sausage into very thin rounds. Place the sausage slices on a baking sheet and bake in the oven for 5 minutes. Watch carefully, as the sausage can easily burn. When the meatballs are ready, place them on a plate and top each one with a piece of baked chorizo. The meatballs can be prepared ahead of time and reheated in the microwave. The chorizo should be baked just before serving.
