    1. Pound the pieces of pork on both sides to make thin cutlets.

    2. For the filling, mix cottage cheese, finely grated cheese, lemon zest, and sour cream. Add a pinch of black pepper, a pinch of salt, and dried basil. Mix well.

    3. Place the filling onto the cutlets and roll them up. Secure the edges with wooden toothpicks. Try to ensure the filling does not protrude from under the meat.

    4. Sear the rolls in vegetable oil over high heat until golden brown on all sides. Transfer the rolls to a sauté pan.

    5. Peel the onion and slice into quarters or rings. I use frozen white mushrooms, but you can use any mushrooms.

    6. In the pan where the rolls were fried, add the onion and mushrooms and sauté for about 15 minutes, season with salt and pepper to taste. If using button mushrooms, first sauté the onion, then add the mushrooms and cook for about 5 minutes.

    7. Add cream and water or broth to the mushrooms with onions. Boil for about 5 minutes. Add spices to taste.
