
Meat rolls stuffed with vegetables

The recipe won't take much time. Beef rolls with vegetables are an incredibly delicious dish, perfect both for an everyday family dinner and for the most elegant festive table. The bright marinade made with balsamic vinegar and balsamic glaze makes all the difference. I admit, I rarely used balsamic vinegar in cooking before, but now I realize my mistake and I repent!) Prepare all the necessary ingredients.

Cut the meat into 1-1.5 cm thick slices. Carefully pound the meat on both sides and place it into a small deep bowl.

In a deep bowl, mix olive oil and balsamic vinegar, then add finely chopped garlic, red pepper, and a little salt and black pepper.

Pour the resulting marinade over the meat, cover with plastic wrap, and refrigerate for 1 hour.

Heat vegetable oil in a skillet and add the sweet pepper cut into strips. Cook over medium heat, stirring occasionally, for 2 minutes.

Then add the finely chopped garlic to the pan and cook for another 3 minutes over the same heat.

Remove the peppers, and add balsamic vinegar and sugar to the pan. Cook over low heat, stirring constantly, until a balsamic glaze forms.

Remove the meat from the marinade and shake off excess liquid. Place the meat on the work surface. Put the sweet pepper in the center and roll up the meat into a roll.

If desired, you can tie the rolls with string or secure them with toothpicks to prevent them from unrolling, but mine held their shape perfectly without any assistance.

Heat a couple of tablespoons of vegetable oil in a skillet. Add the rolls and fry over medium heat, turning frequently. Adjust the doneness to your preference; I like mine medium rare. I cook for about 8 minutes. If you prefer more well-done meat, cook for 12 minutes. In any case, 2 minutes before they're done, drizzle the rolls with balsamic glaze.

Slice the ready rolls into pieces, arrange them on a plate, and garnish with the remaining sweet pepper and fresh herbs. Serve the dish hot and enjoy!
