Step 1

1. The recipe for preparing a meat roll baked in the oven is quite simple. First, wash and dry the meat. Cut it so that you get a fairly large and even piece (if the piece of meat is not very even, you can make small rolls). Tenderize the meat with a meat mallet. Season with salt and pepper to taste.

Step 2

2. The cheese should be sliced thinly, or grated if desired. Slice the fat thinly as well. If the meat is fatty, you can omit the fat; however, it is an important ingredient for leaner meat.

Step 3

3. Distribute the sliced cheese and salo evenly over the entire surface of the meat. If desired, you can also add some minced garlic.

Step 4

4. Grind the nuts in a mortar or blender. You can use any nuts you have on hand (in this case, walnuts). Wash the parsley (you can add other herbs as well), dry it, and chop finely. Combine the nuts, parsley, and butter. Mix thoroughly until smooth.

Step 5

5. Spread the nut paste in an even layer. Carefully roll it up into a roll and tie it tightly.

Step 6

6. Place the roll on a baking sheet. Peel the onion and carrot and cut them into fairly large pieces. Arrange them on the baking sheet. Add bay leaf and a little water or broth. Transfer to a preheated oven for at least 45 minutes (if the rolls are large, they may need up to two hours to bake). During cooking, baste the meat roll, baked in the oven at home, with the meat juices that accumulate on the baking sheet. Serve the roll hot, removing the strings before serving.
