
Meatloaf with potatoes

The dish is prepared without unnecessary complications. You can make a meat roll with any filling and from different types of meat. But I'd like to offer you a simple recipe for a meat roll with potatoes, perfect for a delicious family dinner or a workday snack. This is how my mom treats me when I visit her. The meat roll isn't made from a whole piece of meat, but from ground meat, which makes it easier and more convenient. There's nothing complicated about preparing it, yet the roll turns out juicy and satisfying. The finished dish is ready to be served.

For the meat roll filling, we'll need mashed potatoes. So start boiling the potatoes, and in the meantime, sauté mushrooms with onions if you'd like to make the filling more elaborate. If you prefer without mushrooms, skip this step.

Add eggs, onion finely chopped or blended in a blender, garlic pressed through a garlic press, salt, and pepper to the meat mince (I used a mixture of beef and pork in equal parts). Mix the mince thoroughly until well combined.

Meanwhile, the potatoes are already cooked, so we'll make mashed potatoes using a masher.

Add fried mushrooms with onions to the mashed potatoes and mix well.

Lay the foil on the table, place the minced meat on it, and shape it into a rectangular layer. Turn on the oven to preheat to 180 degrees.

Now, place the slightly cooled mushroom mashed potatoes on top of the filling.

Form the roll, wrap it in foil, but in such a way that it can be easily removed later.

Place the roll on a baking sheet or in a baking dish, put in the preheated oven for 30-40 minutes.

Carefully remove the foil 10 minutes before the end of cooking, so that the meat roll can brown slightly. You can also brush the top with egg. Once the top is lightly browned, the meat roll with potatoes is ready. Serve hot or cold.
