Instructions

  1. 1

    Step 1

    Step 1

    Prepare all ingredients.

  2. 2

    Step 2

    Step 2

Combine the warm milk, egg, butter, sugar, salt, and yeast.

  3. 3

    Step 3

    Step 3

Mix everything together, add the flour in portions.

  4. 4

    Step 4

    Step 4

Knead a soft, slightly sticky dough. Gather it into a ball, cover the bowl with plastic wrap, and leave it in a warm place to rise for 1–1.5 hours.

  5. 5

    Step 5

    Step 5

Meanwhile, finely chop the onion and carrot and fry them in a pan until softened.

  6. 6

    Step 6

    Step 6

Add the ground meat and fry, breaking up any clumps with a spatula, until the meat turns white.

  7. 7

    Step 7

    Step 7

Then add the cabbage, salt, and spices to taste. Cover the pan with a lid and braise everything together over low heat for about 15–20 minutes (or until the cabbage is done). The filling is ready.

  8. 8

    Step 8

    Step 8

When the dough has risen, punch it down and let it rest for another 30–40 minutes until it rises again. Then divide the dough into three unequal portions.

  9. 9

    Step 9

    Step 9

Roll out the largest piece into a circle, place the filling in the center, pinch the edges toward the center. Transfer seam side down. Do the same with the smaller piece of dough. You should end up with two blanks for the future bull’s muzzle. Give one a round shape and make the other slightly oval.

  10. 10

    Step 10

    Step 10

From the last, smallest piece, pinch off a little dough and form four small balls. Those will be the eyes and nostrils. Divide the remaining dough into 4 parts. Roll out each piece and put the filling in the center. For two pieces, bring the edges to the center; for the other two, shape them the way you would stuffed turnovers (pirozhi). Those will be the pieces for ears and horns. Incidentally, the dough is very pliable and unusually easy to work with.

  11. 11

    Step 11

    Step 11

Line a baking sheet with parchment paper or a silicone mat. From the prepared pieces, assemble the bull as in the photo, shaping the dough as needed. Then cover the baking sheet and let the dough proof for 15–20 minutes. After that, brush with egg yolk and bake the pie in the oven at 180 degrees until golden brown. About 30–40 minutes. Go by your own oven.

  12. 12

    Step 12

    Step 12

    Meat pie “Bychok” is ready.

  13. 13

    Step 13

    Step 13

Decorate the finished pie to taste and serve. I made a nose ring from bell pepper (attached it with toothpicks), and the pupils from olives.
