
Ossetian Meat Pie

Prepare all the ingredients.

Combine warm milk, sugar, and yeast. Stir and let sit for 10 minutes.

In a deep bowl, combine the egg, kefir, sour cream, and salt.

Mix. Add the flour and the risen starter.

Knead a soft dough that does not stick to your hands. Shape it into a ball, brush it with vegetable oil, cover the bowl with plastic wrap, and leave it in a warm place for 1 hour.

The finished dough should roughly double in size.

For the filling, combine the minced meat, finely diced onion, and garlic passed through a press. Add salt and spices to taste. Mix everything well.

Divide the dough into two parts. Flatten each piece with your hands to form a flatbread (the flatbread should not be made thin, otherwise the dough will tear). Place 1/2 of the meat filling in the center of the flatbread (it is better not to spread the filling over the flatbread, but to place it in a small mound).

Gather the edges of the flatbread toward the center and pinch them together well. The filling should end up inside the flatbread.

Carefully flatten the tortilla from the center to the edges.

Make several slits on the surface of the pie to let steam escape, trying not to cut all the way through. Usually, the slits are made in the form of some kind of pattern. Prepare the second pie in the same way, dividing the dough and filling equally. Place the baking tray with the pie on the lower rack of an oven preheated to 230 degrees and bake for about 10 minutes. Then carefully move the baking tray to a higher rack (but not the highest) and cook for another 5–7 minutes. About 3–4 minutes before the pie is done, you can pour 2–3 tablespoons of broth into the openings in the pie.

Brush off any excess flour from the finished pie with a pastry brush, transfer the pie to a serving dish, and generously grease it with butter. Prepare the second pie in the same way, butter each pie, and stack them one on top of the other. When serving, all the pies stacked together are cut at once.
