
Soft chocolate cookies
Description
Perfectly pairs with tea and coffee. For the cookies, use high-quality dark cocoa, butter, and other ingredients as listed. You can optionally add vanilla sugar or vanillin, but in my opinion, it already smells so deliciously chocolatey that it doesn't need additional flavorings. Prepare the ingredients, the butter should be cold, let's begin!

Combine all the ingredients except the egg in any convenient way: place in a bowl and chop with a knife or fork, mix by hand, or use a food processor.

I usually make the cookies in a food processor—it's quick and convenient if you have one. Just add all the ingredients directly into the bowl, use a plastic or metal blade (I usually use a metal one), close the lid, and process for a few minutes until the mixture turns into very fine crumbs, like in the photo.

Beat in the egg and turn on the food processor for another minute. If the dough is crumbly and not coming together, add 1 teaspoon of cold water. Turn on again. It's acceptable to add a couple of tablespoons of water—adjust according to the dough's consistency. The dough should not be sticky; our goal is simply to bring it together into a dry ball.

My dough was ready after the first teaspoon of water—it came together and wasn't sticking to my hands. Take it out of the food processor.

Gather the dough into a ball, divide it into 16 pieces (I keep cutting it in half with a knife until I have 16 equal pieces—it's convenient). Roll each piece into a ball, place them on parchment paper. Take a piece of parchment paper and a cup with a flat bottom, place the parchment on top of each dough ball, then press down with the cup to shape the cookies.

By the time you're ready to bake, your oven should already be preheated to 180 degrees. Bake the cookies for 12–15 minutes, no longer! The cookies should rise slightly and become a bit lighter in color. If baked longer, they will lose their softness and turn crumbly. Cool them on a wire rack; if left on the hot baking sheet, they will continue to cook instead of cooling down.
