Soft butter cookies
Description
Perfectly pairs with tea and coffee. You can shape the cookies into any form or size using cookie cutters or your hands, as desired. Remember not to overbake them—just lightly brown the surface so they remain soft inside. The cookies are especially delicious with syrup or in a layered dessert soaked in coffee with cognac—give it a try. Don't forget hot tea, coffee, chocolate, or warm milk. Serve warm or chilled. Ideal with tea.
Instructions
- 1
Step 1

Prepare the listed ingredients. Place the butter in the freezer for 30–40 minutes to partially freeze it. Use a high-quality product, or substitute it with good margarine, but not spread!
- 2
Step 2

Sift the premium wheat flour into a bowl or mixing bowl. Add the baking powder. Grate the frozen butter directly into the same bowl using a coarse grater.
- 3
Step 3

Place chicken yolks or substitute with 3-4 tablespoons of sour cream or full-fat milk.
- 4
Step 4

Add granulated sugar or powdered sugar, salt, and pour in a few drops of flavoring. Instead of lemon flavor, you can use ground cinnamon, vanilla, etc.
- 5
Step 5

Gently mix all the ingredients in a bowl and knead a firm, dense, colorful dough. Cover it with plastic wrap and refrigerate for half an hour to allow the butter in the dough to firm up slightly.
- 6
Step 6

Line a baking sheet with parchment paper and preheat the oven to 180 degrees. Call your family, children, or friends and roll the dough into small balls, placing them onto the parchment paper. Put the baking sheet into the oven and bake for 15–20 minutes, until the buns are golden brown.
- 7
Step 7

Carefully transfer the hot cookies onto a plate using a silicone spatula and let them cool slightly. They will become crispy on top, while the center remains soft and tender.
- 8
Step 8

Brew a fragrant tea and enjoy the delicious crumbly pastry with your loved ones. Enjoy your meal!
