Description
Beef for shashlik should be free of sinews, with small amounts of fat marbling. If you use only beef fillet, the shashlik will turn out dry. To make delicious beef shashlik, each piece of meat must contain some fat. If you can't find suitable beef with enough fat, you can grill pieces of beef alternated with pieces of pork fatback while cooking (arrange them in this order: 1 piece of fatback for every 2 pieces of beef). That's the entire secret to perfect, tender beef shashlik.
