Homemade pastries for tea. This strange and unfamiliar word to us is the name of an Eastern sweet treat, more precisely a traditional Azerbaijani dish prepared for the Nowruz holiday. The recipe for mutaki is quite simple, yet the taste of these cookies turns out to be truly unique. I believe the secret lies in the special combination of a delicate crumbly dough with a nutty-sugar filling, along with the addition of spices, which is a hallmark of all Eastern cuisine. As for the preparation method, it's very easy—if you've ever baked cookies before, you'll have no trouble mastering this simple mutaki recipe.     First, we mix 2 cups of flour with salt, baking powder, and vanilla. Then, we rub the softened butter into the flour mixture until it resembles "crumbs." In a separate bowl, mix 3 egg yolks and sour cream, then pour this mixture into the flour "crumbs" and stir.

    Next, gradually add the third cup of flour, kneading until you get a thick, elastic, and soft dough.

    Divide the prepared dough into 4 equal parts, wrap each in plastic wrap, and refrigerate for half an hour.

    Meanwhile, we will prepare the filling: beat the egg whites until thick foam forms, and mix the chopped nuts with sugar. Then combine the egg whites and the nut-sugar mixture, stirring well. Next, take one ball of dough and roll it out into a circle 30 centimeters in diameter. Divide this circle into 16 equal parts (like a pizza). Place the filling onto the wider part of each segment and roll up each segment toward the center, forming a roll.

    Place our rolls into a baking dish and bake in a preheated oven at 180 degrees for 20 minutes.
