Mousse cake with mango

Description

The recipe won’t take much time. The cake turns out very delicate and looks beautiful when sliced. It’s a great choice for a celebration, though it is quite high in calories. If you like, you can add pieces of fresh mango to the jelly layer and decorate the cake. Serve chilled or slightly warm.

    Prepare all the ingredients you need to make a mango mousse cake.

    Crumble the sponge cake and place it in a bowl.

    Chop or grate the chocolate and transfer it to a heavy-bottomed saucepan. Add the butter, place over low heat and, stirring constantly, melt until smooth and well combined.

    Combine the sponge cake crumbs with the chocolate mixture and mix. Spoon the cake mixture into a 10 cm pastry ring and press it down firmly. Refrigerate.

    In a bowl, place the cream cheese, add the confectioners’ sugar, and pour in the cream. Whip everything until light and fluffy, then spread it over the sponge cake in an even layer, reserving a little for decoration.

    Soak the gelatin and leave it to swell according to the instructions.

    Pour the dissolved gelatin into the mousse purée and mix until smooth.

    Whip the cream for the mousse with powdered sugar until light and fluffy.

    Combine both mixtures and mix until smooth. Pour the mousse over the cream and refrigerate for 1–2 hours until set.

    Heat the remaining mango purée over low heat until the first bubbles appear, watching that it does not scorch. Combine the sugar and cornstarch, add to the mango, stir until smooth and, stirring constantly, cook for another 1–2 minutes until thickened.

    Remove the saucepan with the mango mixture from the heat, add the bloomed gelatin, stir until smooth, and let cool. Pour the jelly mixture over the top of the mousse layer and refrigerate until fully set, about 1–2 hours.

    Remove the cake from the ring, decorate with the remaining cream, and as you like.
