Description

The recipe won't take much time. Try making this soft, delicate mousse cake "Raffaello" and treat yourself and your loved ones! The cake turns out delicious, with a flavor just like "Raffaello" candies. This beautiful, airy, snow-white cake is perfect for a festive New Year's dessert table. Serve with tea or coffee.

    Using a mixer, beat the egg with 30 g of sugar until the mixture at least doubles in volume. Then add 30 g of flour, starch, and mix until smooth.

    Pour the batter into a baking pan lined with parchment paper. Bake the cake layer in a preheated oven at 180 degrees for 10-15 minutes.

    Put part of the milk on low heat and add vanilla there. While the milk is warming, separately beat the egg yolk with 45 g of sugar, then add the remaining milk and the rest of the flour. Beat the mixture until smooth.

    Pour the resulting mixture into the saucepan with the warming milk and vanilla. Keep the mixture on the heat, stirring constantly and vigorously, until it thickens.

    Add 1 teaspoon of swollen gelatin to the ready and still warm cream.

    Pour the mousse into a mold lined with plastic wrap and place in the freezer for 1 hour.

    Mash the mascarpone cheese with a fork, add the melted chocolate, and mix in 3 g of bloomed gelatin. Add the whipped cream to the chocolate-cheese mixture and stir until smooth.

    Assemble the portioned mousse cakes in silicone molds. First, pipe Mascarpone cheese mousse through a pastry bag as the first layer, then add the set custard cream cut into small squares, followed by another layer of mousse, and finally place a biscuit base on top.

    Put the preparations in the freezer overnight. Decorate the finished mini-cakes to your taste. I used chopped nuts and "Raffaello" candies.
