
Mandarin mousse cake
Description
Delicious baked goods for the whole family. You can make a colorful, juicy cake at home in just 2–3 hours. The main thing is to stir the gelatin thoroughly in the water so it dissolves completely; otherwise bits of gelatin will end up in the cream. Serve chilled or slightly warm.

Prepare the listed ingredients.

Crack the chicken eggs into the food processor bowl, add salt and sugar. Whisk everything for 3–5 minutes until light and airy. You can use a mixer.

Gently stir in (or fold in) the wheat flour with careful movements; do not beat.

Preheat the oven to 180 °C (350 °F) and grease the pan with vegetable oil. Pour in the sponge batter and bake for about 25 minutes, checking doneness with a wooden skewer. Then remove from the oven and let cool.

From the cooled sponge cake, cut out layers for the mold. Wrap the mold in plastic wrap or set up acetate film. Peel the mandarin and remove the white pith. Leave the second fruit for decoration. Slice the mandarin into rings, then cut each ring in half and arrange the halves along the sides of the mold. Cut the remainder into cubes and spread them in the center.

Put the gelatin and sugar into a deep container, pour in boiling water, and stir. Leave for 5 -10 minutes to soften, then stir again.

Pour in sour cream of any fat content or cream, and mix again.

Pour the prepared mousse into the tin (or mould) with the cake layers and mandarins. Put the tin in the refrigerator for at least 2 hours to set.

After the specified time, take the cake out of the refrigerator, remove the mould and the plastic wrap.

Decorate the cake with the remaining mandarin and mint leaves; serve chilled.
