
Frozen cherry mousse cubes
Description
You can prepare this whipped dessert using any berries, either frozen or fresh. Berries without large pits (such as currants, raspberries, etc.) can be blended directly into purée without prior heating.

Prepare the ingredients needed to make frozen cherry mousse cubes. If instant gelatin is not available, you can use regular gelatin in the same amount. Just make sure to soak it in a small amount of water beforehand.

Place the berries in a saucepan and pour in the water. Put the saucepan with the berries over low heat and periodically stir the contents with a spoon. Do not boil the berries; they should only be warmed and softened.

After 7-10 minutes, the berry skins will begin to burst. At this point, the pot can be removed from the stove.

Strain the cherries through a sieve to remove the pits and obtain fruit puree.

Add powdered sugar and instant dissolving gelatin (or already swollen regular gelatin) to the resulting liquid puree, and mix the mixture with a spoon.

Place the berry mixture over a water bath and heat until the gelatin is completely dissolved. Keep in mind that the mixture temperature should not exceed 60 degrees.

Pour the warm berry mixture into a suitable container and whisk for 8-10 minutes.

By this time, the mixture will become lighter, gain airiness, and its volume will noticeably increase.

Pour the resulting cherry mousse into a mold (a silicone one is convenient to use) and refrigerate for at least 2-3 hours (you can leave it overnight).
