Coconut mousse
Description
This is a fairly simple recipe for coconut mousse, provided you have cream on hand. If you don't, you can try replacing it with coconut flakes, which should be simmered gently in heavy cream. 1. First, wash and dry the lemon. Carefully grate the zest using the finest side of the grater. 2. In a small bowl, combine the zest with 1 tablespoon of sugar. Rub the zest thoroughly with your hands until it is well mixed with the sugar. Set aside for now. 3. Begin beating the coconut cream with a pinch of salt at a low speed. Then add sugar to taste (you can use just a couple of tablespoons or up to 1 cup—this depends on your preference). Continue beating until soft peaks form. 4. Add the sugared lemon zest to the cream and continue beating until stiff peaks form. 5. If desired, you can enhance the homemade coconut mousse with 1–2 teaspoons of lemon juice or a few drops of vanilla extract. 6. After preparation, it's best to chill the mousse in the refrigerator for 10–15 minutes, then portion it into serving glasses, garnish with lemon zest slices, and serve.
