
Blackcurrant mousse
Description
The dish is prepared without unnecessary complications. Blend the blackcurrant berries into a puree using a blender, then pour in water and simmer for 15 minutes. Strain the broth, add sugar and bring to a boil. Gradually stir in semolina, cook for 15 minutes, then let it cool. Once cooled, beat the mousse well, distribute it into dessert glasses, and refrigerate for a couple of hours. After that, the dessert is ready to be served.

Thaw the berries. Fresh ones are, of course, better, so if possible, use fresh berries.

Mash them into a puree.

Pour water over the berry puree and boil for 15 minutes after it starts boiling. Then turn off the heat, let the berry infusion steep for five minutes, and strain.

Add sugar to the decoction and, stirring, bring to a boil. Pour the semolina into the boiling liquid in a thin stream. Continuously stir to prevent lumps from forming. Cook for 15 minutes, then set aside to cool completely.

Whisk the cooled mousse well, divide it into serving glasses, and refrigerate for a couple of hours. After that, it's ready to serve.
