The recipe won't take much time. Moussaka is prepared in Greece, Bulgaria, Moldova, and Ukraine—in other words, everywhere where eggplants grow. I first tried this dish at a friend's place near Odesa, and since then I've been making this casserole quite often during summer. The recipe for moussaka with minced meat is very simple, and it doesn't take much time to prepare. I'm sharing with you an easy recipe for moussaka with minced meat.     Wash the eggplants and cut them into longitudinal slices. Sprinkle with salt and let sit for 20-30 minutes. During this time, the juice will be released and the eggplants will lose their bitterness.

    We make béchamel sauce. Melt butter in a pan, add flour and mix. Lightly sauté.

    In small portions, pour the milk into the butter-flour mixture and stir well to prevent lumps from forming in the sauce. Add the grated processed cheese, a pinch of salt, and nutmeg. Mix well, then remove from heat. Cover with a lid and let it cool.

    Peel the onion and cut into small cubes. Fry in vegetable oil until half-cooked, then add the minced meat to the onion. Fry for about 10 minutes.

    Wash the tomatoes, then peel them. Chop the tomatoes finely and add them to the mince. Simmer everything for 6-7 minutes, then remove from heat.

    Wash the eggplants under cold water, dry them, and fry in a dry skillet without oil. You can also bake them in the oven.

    We proceed to assemble the moussaka. The first layer will be eggplants. Place half of them on the bottom of the baking dish.

    Add corn to the minced meat and spread half of the mixture over the eggplants. Season with spices, salt, and pepper.

    Spread half of the sauce, then repeat the layers—eggplant, meat filling, béchamel. Top with grated hard cheese and place the moussaka in the oven. Bake for 30-35 minutes at 180 degrees.
