
Eggplant Moussaka
Description
The recipe won't take much time. Moussaka is a dish that doesn't have one single correct recipe. It's prepared in various ways. However, overall, moussaka is almost always made with eggplants, minced meat, and béchamel sauce—just like in this recipe. Greeks eat moussaka both as a hot dish and as a cold salad, but personally, I prefer the first option. That said, it's worth trying both ways. Good luck. Serve hot.

Slice the eggplants into thin (1-1.5 cm) slices, place them on a baking sheet, and spray with olive oil. Put the baking sheet into a preheated oven at 180 degrees and bake for 30 minutes.

Finely chop the onion and sauté until translucent.

Cut the pork and beef into small cubes first, then grind into minced meat using a blender.

Add the ground meat to the pan with the onion and cook until the pink color disappears. Then pour 200 ml of dry white wine into the pan and simmer everything, stirring, for about 20 minutes.

Make a cross-shaped incision on the tomatoes (as shown in the photo), then dip them into boiling water for a couple of minutes. Then peel the skin off the tomatoes.

Cut the tomatoes into small cubes and add them to the pan with the minced meat. Add salt and simmer for another 15–20 minutes.

Add the spices, mix and remove from heat.

Peel the potatoes and slice them thinly (0.5 cm). Fry them in a pan until partially cooked, then season with salt.

Take a baking dish and lightly grease it with oil. Place a layer of fried potato slices on the bottom.

Then we lay a layer of minced meat. Level it.

Place the baked eggplants on top.

Pour the baking dish with béchamel sauce. To prepare the béchamel sauce: sauté flour with butter, then add milk and heat the sauce, stirring, until thickened. At the end, add salt and nutmeg.

Place the baking dish with moussaka in an oven preheated to 190°C and bake for 35–40 minutes at this temperature.
