
Vegetable moussaka

Wash the eggplants and slice them into rounds. Sprinkle with salt and let stand for 10 minutes. Then rinse with water. Next, fry in oil until golden brown.

Wash the pepper and herbs and chop them. Blanch the tomatoes and remove the skin. Finely chop them as well. Mince the garlic. Peel and finely chop the onion. Sauté the vegetables in oil for 5 minutes. Add the paste and cinnamon. Cook for another 4 minutes.

Rinse the lentils. Cover with water and cook for 25 minutes.

Place the vegetables in a baking dish. Mix them with the lentils. Sprinkle all with herbs on top.

Mix ricotta with yogurt, salt, eggs, nutmeg, and black pepper. Pour the mixture into the dish. Sprinkle cheese on top.

Bake the moussaka for 30 minutes at 170 degrees in the oven.
