First, prepare all the ingredients. Wash the vegetables thoroughly.

Slice the eggplants into long strips 1 cm thick, sprinkle with salt, and let stand for 30 minutes. Then rinse off the salt, dry the eggplants, and bake them in the oven under the grill for about 10 minutes, brushing both sides with olive oil. Flip them once during baking.

Slice the potatoes into 0.5 cm thick slices and boil in salted water until almost cooked.

Add 3 tbsp of vegetable oil to a preheated skillet and sauté the chopped onion until translucent.

Meanwhile, beat 1 egg in a bowl and slowly pour in a small amount of the hot sauce, stirring constantly. Pour this mixture back into the saucepan with the sauce and cook for 1-2 minutes until thickened. Remove the finished sauce from the heat and place the container in cold water.

Grease the bottom of the baking dish with vegetable oil and place the eggplants in a single layer. Lightly salt and pepper. Spread the meat filling over the eggplants. Next, add a layer of potatoes. Evenly distribute the sauce on top and sprinkle with feta cheese.
