
Multigrain bread
Description
Home-baked treats for tea. Multigrain bread is very easy to make, since it doesn’t even require kneading or your direct involvement in the process—the only thing you need is time for the dough to rise. Serve warm or chilled. Perfect with tea.

Prepare the ingredients according to the recipe list. The flour can vary, but you must maintain the proportional ratio of dry ingredients to water. Knead the dough 10–12 hours before baking. It is best to do this in the evening.

Pour all the dry ingredients into the mixing bowl and mix.

Add 300 to 350 grams of cold water and mix by hand.

Knead the dough by hand; you don't need to knead it thoroughly, just combine all the ingredients. Cover and leave at room temperature for 10-12 hours.

After 10–12 hours, active fermentation is observed in the dough.

Generously flour the work surface, place the dough on it, and roll it into a rectangular sheet.

Fold the dough as shown in the photo: place the right and left portions on top of each other, overlapping by one-third.

Pick up the top part of the dough and, with a toward-you motion, roll it into a roll.

Pinch the seam and sides, tuck under, and shape into a ball.

Place the dough on the baking sheet on which the bread will be baked.

Cover with a bowl and leave undisturbed at room temperature for 2 hours.

30 minutes before the end of the proofing time, place a cast iron pot in a cold oven and preheat at 250°C for 30 minutes.

Remove the preheated cast iron pot from the oven and, holding the edges of the parchment, carefully lower the bread into the hot pot.

Cover the pot with a lid and bake the bread at 250 degrees for 30 minutes.

After 30 minutes, remove the lid, lower the temperature to 180 degrees, and bake for another 25 minutes.

After 55 minutes, remove the bread from the pot by lifting it with the ends of the baking parchment.

Transfer the bread to a wire rack until completely cooled.
