
Mudammas
Description
Mudammas can be made from many different beans. The main thing is to cook them until soft. When stewing, about 75% of the liquid should evaporate. Mudammas is served hot, one portion per plate. The dish is garnished and complemented with tomatoes, eggs, fresh onion, and finely chopped herbs. This is a very ancient dish, tasty and healthy — no wonder its recipe has survived to our day. In the past, of course, beans were boiled, not taken from a can. Good luck, and serve with herbs and sauce.

Fry the onion in olive oil, add garlic and caraway.

Add the beans, spices, and water. Bring to a boil and cook for 10 minutes. Reduce the heat and simmer for 30 minutes.

Transfer the beans to a bowl, add lemon juice, and crush with a pestle.

Serve in individual portions, garnished with tomatoes, eggs, onion, and herbs.
