
Marble Kulich with Chocolate‑Coffee Glaze
Description
The recipe won't take much time. I added 1/2 cup of chocolate shavings to the dough. Dissolve the yeast in warm milk, add half of the flour, stir so there are no lumps, and place the starter in a basin with warm water. When the dough doubles in size, add: salt, egg yolks beaten with sugar and vanilla + melted butter + beaten egg whites + the remaining flour. The dough should not be very thick, but should pull away from the hands (in my opinion, this makes the dough very runny ;-)) yet the finished cake turns out super airy, weightless!!!) Put it in a basin with warm water and wait until it doubles in size. Add raisins (I added chocolate shavings; you can use nuts, candied fruit), distribute into molds (I filled them about 1/3 full), place in a warm spot, cover with a towel and let rise to 3/4 of the mold height. Brush with egg (I didn’t do this) and bake at 175 °C for 40–50 min. I baked in stainless steel rings with greased parchment, putting about 110 g of dough into each ring. Let the cooled “cakes” be covered with glaze – melt chocolate + a drop of milk + a little coffee (optional). Enjoy! Serve warm or chilled. Perfect with tea.
